If you are Italian, or if your grandma is, I want to apologize. I realize that this dish breaks every rule of “real” Carbonara, which I dearly love. My wonderful wife, though, when served any Carbonara ever, says “this isn’t very creamy.”
This dish, crafted with wild abandon, was made with her in mind. She loved it, and I have to confess that I thought it was super tasty, too.
If you’re eating at The Overlook, and you appreciate authentic, rustic, Italian cooking, make a different choice (try the Bolognaise!). If you’re looking for Midwestern comfort food, you’ve found it.
